Bou Khudi is typical Bengali delicacy. Khudi(broken rice) is a grade of rice consisting of grains broken in the milling process. Bangladesh is the fourth-largest rice producer in the world. In the process of rice production it creates lots of broken rice (Khudi ), so there are few recipes with Khudi ( broken rice) which is less expensive than rice. For that reason Khudi (broken rice) is more popular among poorer consumers.
Ingredients
- 2 cup broken rice (khud)
- Half cup sliced onion
- 1 tablespoon sliced ginger
- 2 teaspoon sliced garl
- 3-4 dry chilies
- 1/3 cup oil (mustard oil preferable )
- 3 cup hot water
- Salt to taste.
